2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ cup sugar
175 grams of butter (about 6 ounces or 3/4 cup)
1 large egg, beaten
2-3 teaspoons orange zest (or lime zest)
½ teaspoon of dried, chopped vanilla bean
½ cup cranberries
½ cup pistachios
¼ cup white chocolate bark, chopped
Sift flour and baking powder and salt together; reserve in a separate bowl. Using a mixer, beat the sugar and butter together. Add the orange zest, beaten egg, then mix in the cranberries, pistachios and chocolate bark. Form the dough into a log shape, and freeze it in plastic wrap (about ½ an hour). Remove from the freezer, and slice the roll into rounds with a sharp knife. Bake the cookies on a parchment covered cookie sheet 12-15 minutes in a pre-heated oven (350 F). Cool on a rack, and then enjoy your delicious seasonal treats. Yum!
